Preheat your oven to 325°F (165°C). To bake, place the smoked bone-in chops in a baking dish or on a rimmed baking sheet and cover loosely with foil. Bake for about 15 to 20 minutes, or until the internal temperature reaches 140°F (60°C). For a browned finish, remove the foil during the last 5 minutes of cooking.
For grilling, preheat your grill to medium heat. Grill the chops for about 4 to 6 minutes per side, until heated through and slightly charred.
